Ingredients

Cookie Dough

  • 1 cup (125 g) self-rising flour

Instructions

  1. Preheat oven and prepare baking sheet: Preheat your oven to 325°F (163°C). Line a large cookie sheet with parchment paper to prevent sticking and ensure even baking.
  2. Cream butter and sugar: In a large mixing bowl, add softened butter and granulated sugar. Using a flat paddle attachment on your mixer, beat at medium speed, gradually increasing to high, until the mixture becomes light and fluffy. This should take about 1 minute, with occasional scraping down of the bowl sides to ensure even mixing.
  3. Add flour and combine: Add the self-rising flour to the butter mixture. Start mixing at the lowest speed to incorporate the flour completely; initially, the dough will appear crumbly. Slowly increase the speed until a dough forms. It’s normal for the dough to feel slightly dry.
  4. Scoop dough onto the baking sheet: Use a 1.5 tablespoon cookie scoop to portion out dough balls onto the prepared cookie sheet, spacing them about 1.5 to 2 inches apart to allow for spreading.
  5. Add sprinkles (optional) and flatten: If using sprinkles, pour 1 tablespoon into a small bowl. Press the top of each dough ball into the sprinkles, covering the surface generously. Then place them back on the baking sheet and gently flatten each dough ball to approximately 9/16 inch thick. There should be some sprinkles left unused.
  6. Bake and cool: Bake the cookies for 15 to 16 minutes or until the edges start to turn a light brown color. The cookies will puff up initially and then deflate to form a crinkly appearance as they cool. Allow the cookies to cool on the baking sheet before removing.
