Ingredients
8 oz mascarpone cheese, softened
1 cup heavy cream
1/2 cup white chocolate, melted
1/2 cup powdered sugar
1 tsp vanilla extract
1 cup fresh raspberries
1/2 cup shelled pistachios, chopped
1 pack of ladyfingers (about 24)
1/2 cup raspberry or strawberry liqueur (optional, for soaking)
1 tablespoon lemon zest (optional, for garnish)
Instructions
- In a large bowl, beat the mascarpone cheese until smooth.
- Add in the melted white chocolate, powdered sugar, and vanilla extract. Mix until well combined.
- In a separate bowl, whip the heavy cream until stiff peaks form.
- Gently fold the whipped cream into the mascarpone mixture, ensuring everything is well incorporated.
- In a shallow dish, pour the raspberry or strawberry liqueur (if using) and dip each ladyfinger into the liqueur for a few seconds. Arrange the soaked ladyfingers in a layer at the bottom of a 9×9-inch baking dish.
- Spread half of the mascarpone mixture over the ladyfingers, smoothing it out with a spatula.
- Sprinkle half of the fresh raspberries and chopped pistachios over the mascarpone layer.
- Add another layer of soaked ladyfingers, followed by the remaining mascarpone mixture.
- Top with the remaining raspberries, pistachios, and lemon zest (if using).
- Refrigerate the tiramisu for at least 4 hours, or preferably overnight, to allow the flavors to meld together.
- Serve chilled and enjoy!
Notes
Store the tiramisu in an airtight container in the refrigerator. It will keep for up to 3 days.
If using frozen raspberries, make sure to thaw and drain them properly before using them in the dessert to avoid excess moisture.
If you prefer a different crunch, you can swap pistachios with almonds or hazelnuts.
For an extra indulgent treat, sprinkle mini white or dark chocolate chips between the layers of tiramisu.
For a non-alcoholic version, soak the ladyfingers in a mixture of fruit juice or coffee instead of liqueur.
For a gluten-free version, use gluten-free ladyfingers or sponge cake.
