Ingredients

For the salad:

4 cups cubed watermelon (about 1/2 small watermelon)

2 cups fresh pineapple, diced (about 1/2 pineapple)

1/2 cup cucumber, diced (optional)

1/4 cup fresh mint leaves, chopped

1/4 cup red onion, thinly sliced (optional)

For the citrus dressing:

2 tbsp fresh lime juice

1 tbsp honey or maple syrup (optional)

1 tbsp olive oil

A pinch of salt

Instructions

  1. Prepare the fruit: Cut the watermelon into cubes, removing the rind. Dice the pineapple and, if using, dice the cucumber and slice the red onion.
  2. Combine the ingredients: In a large mixing bowl, combine the watermelon, pineapple, cucumber (if using), red onion (if using), and chopped fresh mint. Gently toss to mix.
  3. Prepare the citrus dressing: In a small bowl, whisk together lime juice, honey (or maple syrup), olive oil, and a pinch of salt until well combined.
  4. Dress the salad: Drizzle the dressing over the fruit and toss gently to coat evenly.
  5. Serve: Serve immediately or chill for 20-30 minutes to allow the flavors to meld. Garnish with extra mint if desired.

Notes

For a spicier kick, add a few slices of jalapeño or a sprinkle of chili powder.
