Ingredients

Syrup

  • ½ cup maple syrup
  • ½ cup water

Mocktail

  • 2 cups fresh watermelon cubes
  • 12 fresh mint leaves plus extra for garnish
  • ¼ cup fresh lime juice
  • ¼ cup maple simple syrup (prepared as above)
  • Lime sparkling water, to top off
  • Ice cubes, as needed
  • Watermelon slices or wedges for garnish

Instructions

  1. Prepare Maple Simple Syrup: In a small saucepan, combine equal parts maple syrup and water (½ cup each). Warm over low heat until the mixture gently simmers. Let it cook for about five minutes, stirring occasionally, until it thickens slightly. Remove from heat and allow to cool completely. Once cooled, transfer to a clean airtight container and refrigerate until ready to use.
  2. Blend Watermelon Mixture: Add the fresh watermelon cubes, fresh lime juice, and mint leaves to a high-powered blender. Blend on high speed until completely smooth and the mint is fully incorporated.
  3. Strain the Mixture: Pour the blended mixture through a fine mesh sieve into a bowl or pitcher to remove pulp and solids, ensuring a smooth texture for your mocktail.
  4. Add Maple Simple Syrup: Stir the cooled maple simple syrup into the strained watermelon mixture to sweeten the drink evenly.
  5. Assemble the Mocktail: Fill serving glasses with ice cubes. Divide the watermelon mixture equally among the glasses.
  6. Top with Lime Sparkling Water: Gently add lime sparkling water on top of the watermelon mixture to fill the glass and add a fizzy, citrusy finish.
