This Vegan Mug Brownie is a quick and easy single-serving dessert that comes together in just minutes. Made with simple pantry ingredients and cooked in the microwave, it delivers a rich, fudgy brownie experience without any animal products. Perfect for a speedy treat when you crave chocolate but want to keep it vegan and fuss-free.

Ingredients

Brownie Base

  • 2 tablespoons oil
  • 2 tablespoons water
  • 4 tablespoons brown sugar (or coconut sugar, white sugar, or cane sugar)
  • 2 tablespoons cocoa powder
  • 4 tablespoons flour
  • ¼ teaspoon sea salt
  • ½ teaspoon vanilla bean paste

Add-Ins

  • 1 tablespoon chocolate chips (+ extra for topping)

Instructions

  1. Mix Wet Ingredients: In a mug, combine the oil, water, sugar, and cocoa powder. Whisk together vigorously for about 15 seconds until smooth and well combined.
  2. Add Dry Ingredients: Add the flour, sea salt, and vanilla bean paste into the mug. Stir thoroughly for about 30 seconds making sure to incorporate the flour fully, especially scraping the bottom of the mug to prevent lumps.
  3. Fold in Chocolate Chips: Add the chocolate chips into the batter and gently fold them in. You can also sprinkle some extra chips on top for an indulgent finish.
  4. Microwave to Cook: Place the mug in the microwave and cook on high for 60 seconds. The brownie might seem slightly undercooked, but it will continue to firm up as it cools, ensuring a gooey texture rather than overbaking.
  5. Cool and Serve: Allow the brownie to cool in the mug for 3 to 5 minutes before digging in. This helps it set and enhances the fudgy experience. Enjoy your quick vegan dessert!

Notes

  • The cooking time can vary depending on your microwave’s power; adjust by 10 seconds if necessary.
  • For a gluten-free version, substitute the all-purpose flour with a gluten-free flour blend.
  • You can use any type of sugar you prefer: brown, coconut, white, or cane sugar.
  • If vanilla bean paste is unavailable, vanilla extract is a fine substitute.
  • Adding extra chocolate chips on top creates a melty, decadent finish.
  • This recipe is perfectly portioned for one mug—perfect for solo treats or quick chocolate fixes.
