Vegan Maple Cream Cookies are crisp maple-flavored cookies sandwiched with a sweet, creamy maple filling. Inspired by the classic maple leaf cookies but made fully plant-based, they’re cozy, indulgent, and perfect for holidays, gifting, or everyday enjoyment.

Ingredients

For the Cookies:

2 1/4 cups all-purpose flour

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 teaspoon cinnamon

1/2 cup vegan butter, softened

1/2 cup brown sugar

1/3 cup pure maple syrup

1/4 cup plant-based milk

1 teaspoon vanilla extract

For the Maple Cream Filling:

1/2 cup vegan butter, softened

2 cups powdered sugar

1/4 cup pure maple syrup

1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Whisk together flour, baking powder, baking soda, salt, and cinnamon.
  3. In a large bowl, cream vegan butter and brown sugar until fluffy. Mix in maple syrup, plant-based milk, and vanilla.
  4. Gradually add dry ingredients to wet mixture and stir until a dough forms.
  5. Roll dough on a floured surface and cut into shapes (maple leaves are traditional).
  6. Place cookies on baking sheet and bake 8–10 minutes, until lightly golden. Cool completely.
  7. Make Filling: Beat vegan butter until creamy, then add powdered sugar, maple syrup, and vanilla. Mix until smooth and spreadable.
  8. Assemble: Spread or pipe filling on the flat side of one cookie and sandwich with another. Repeat until all cookies are filled.

Notes

Add chopped pecans or walnuts to dough for texture.

Use pumpkin spice instead of just cinnamon for stronger fall flavor.

Drizzle finished cookies with melted vegan white chocolate for a decorative touch.

For less sweetness, reduce powdered sugar and add more vegan butter to the filling.
