Ingredients

Dry Ingredients

  • 1 cup all purpose flour
  • 1/4 cup cocoa powder
  • 1/2 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

Wet Ingredients

  • 3/4 cup soy milk
  • 3 tablespoons melted vegan butter
  • 1 teaspoon vanilla paste

Glaze

  • 1 1/2 cups powdered sugar
  • 1/4 cup soy milk
  • 1 teaspoon vanilla paste

Instructions

  1. Preheat the oven and prepare the pan: Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius) and lightly spray a donut pan with non-stick spray to ensure the donuts release easily after baking.
  2. Mix dry ingredients: In a large bowl, whisk together the all-purpose flour, cocoa powder, granulated sugar, baking powder, and salt until evenly blended.
  3. Add wet ingredients and combine: Pour the soy milk, melted vegan butter, and vanilla paste into the bowl containing the dry ingredients. Use a large wooden spoon to mix everything thoroughly until you have a smooth batter.
  4. Fill donut pan: Spoon the batter into the prepared donut pan, filling each mold about three-quarters full to allow room for rising.
  5. Bake the donuts: Bake the donuts in the preheated oven for 10-12 minutes, or until the tops are set and a toothpick inserted comes out clean. Let them cool in the pan for 2-3 minutes.
  6. Cool donuts on a wire rack: Carefully transfer the slightly cooled donuts to a wire rack positioned over parchment paper to catch drips. Allow the donuts to cool completely before glazing.
  7. Prepare the chocolate glaze: In a medium bowl, whisk together powdered sugar, soy milk, and vanilla paste until you achieve a smooth, pourable glaze.
  8. Dip donuts in glaze: Once the donuts are fully cooled, dip each donut entirely into the glaze, ensuring an even coating. Return them to the wire rack set over parchment paper to let the glaze set.
  9. Set the glaze: Allow the glaze to harden for approximately 30 minutes at room temperature. You can enjoy the donuts right away if preferred, but the glaze will be less firm.

Notes

  • Ensure donuts are completely cooled before glazing to prevent melting the glaze.
  • Use parchment paper under the cooling rack to catch excess glaze and simplify cleanup.
  • The glaze can be thinned with a splash more soy milk if too thick, or thickened with extra powdered sugar if too thin.
  • For added texture, consider sprinkling chopped nuts or vegan sprinkles on the glaze before it sets.
  • Store donuts in an airtight container at room temperature for up to 2 days for best freshness.
