Ingredients

1 1/2 cups all-purpose flour

2 tbsp granulated sugar

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp ground cinnamon

1/4 tsp salt

1 cup buttermilk

2 large eggs

1 tsp vanilla extract

2 tbsp unsalted butter, melted

Instructions

  1. Prepare the dry ingredients: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, and salt.
  2. Mix the wet ingredients: In another bowl, whisk together the buttermilk, eggs, vanilla extract, and melted butter.
  3. Combine wet and dry ingredients: Pour the wet ingredients into the dry ingredients and stir gently to combine. Be careful not to overmix the batter—it’s okay if there are a few lumps. The key to fluffy pancakes is not overworking the batter.
  4. Cook the pancakes: Heat a large skillet or griddle over medium heat and lightly grease with butter or oil. Once the pan is hot, pour about 1/4 cup of batter onto the skillet for each pancake.
  5. Cook for 2-3 minutes, or until bubbles form on the surface of the pancakes and the edges start to look set. Flip the pancakes and cook for an additional 1-2 minutes, until golden brown and cooked through.

Notes

If making a vegan version, substitute the buttermilk with a plant-based milk (such as almond or oat milk) and use a flax egg in place of the eggs.

For extra spice, add a pinch of ground nutmeg or cloves to the batter.
