Tortellini Caprese Pasta Salad is a fresh, vibrant dish combining cheese-filled tortellini with the classic flavors of a Caprese salad. With creamy mozzarella, sweet tomatoes, and a tangy balsamic dressing, it’s a perfect side or light main course.

Ingredients

1 package (about 9 oz) cheese tortellini

1 cherry tomatoes, halved

8 oz fresh mozzarella balls (bocconcini or ciliegine), halved

1/4 cup fresh basil leaves, chopped

3 tbsp extra virgin olive oil

2 tbsp balsamic vinegar

1 tbsp balsamic glaze (optional, for drizzling)

Salt and freshly ground black pepper, to taste

Instructions

  1. Cook the tortellini: Bring a large pot of salted water to a boil. Cook the tortellini according to the package instructions, typically 2-3 minutes for fresh tortellini. Once cooked, drain and rinse with cold water to stop the cooking process. Set aside to cool.
  2. Prepare the salad: In a large bowl, combine the cooled tortellini, halved cherry tomatoes, fresh mozzarella, and chopped basil.
  3. Make the dressing: In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper. Pour the dressing over the pasta mixture and toss gently to coat everything evenly.
  4. Serve: Drizzle with balsamic glaze for extra flavor (optional) and serve chilled or at room temperature.

Notes

For a more filling meal, add grilled chicken, shrimp, or sliced turkey.

If you prefer a vegan version, swap mozzarella for dairy-free cheese.

For added crunch and flavor, toss in some cucumber, red onion, or bell peppers.

For a vibrant twist, use a pesto dressing instead of balsamic vinegar.

This salad can be made ahead and stored in the fridge for up to 2 days. Add the balsamic glaze right before serving.
