Ingredients

Chicken

  • 2 small chicken breasts

Bread and Butter Mixture

  • 1 Italian style loaf
  • 1 stick unsalted butter, melted
  • 1 tablespoon minced garlic (or garlic paste)
  • 1 tablespoon chopped parsley
  • 1 teaspoon crushed red pepper flakes

Alfredo Sauce

  • ½ stick unsalted butter
  • 1 tablespoon minced garlic
  • ½ cup heavy cream
  • ¼ cup shredded parmesan cheese
  • 1 tablespoon chopped parsley

Toppings

  • ½ cup shredded mozzarella cheese

Instructions

  1. Prepare Chicken: Cut the chicken breasts into ½ inch pieces. Place them in a bowl, drizzle with 1 tablespoon olive oil, and season with 1 tablespoon poultry seasoning or a salt, pepper, and garlic powder blend. Cook the chicken in a pan over medium heat until golden brown and fully cooked, about 5-7 minutes.
  2. Toast Bread with Garlic Butter: Slice the Italian loaf lengthwise in half. In a small bowl, mix 1 stick melted butter, 1 tablespoon minced garlic, 1 tablespoon chopped parsley, and 1 teaspoon crushed red pepper flakes. Spread this garlic butter evenly on both bread halves. Place bread in a preheated 350°F oven and toast for 5-10 minutes, checking at 5 minutes until the bread is crisped to your liking.
  3. Make Alfredo Sauce: Using the same pan from the chicken, heat it over medium-low heat and melt ½ stick butter. Add 1 tablespoon minced garlic and sauté for 2-3 minutes until fragrant. Reduce heat to low and stir in ½ cup heavy cream, ¼ cup parmesan cheese, and 1 tablespoon chopped parsley. Simmer gently, stirring continuously, until the sauce thickens slightly, approximately 3-5 minutes. Remove from heat.
  4. Assemble Garlic Bread: Spread half of the Alfredo sauce over the toasted bread halves. Evenly distribute the cooked chicken pieces on top. Sprinkle shredded mozzarella cheese over the chicken, and then spread the remaining Alfredo sauce over the cheese.
  5. Bake to Melt: Return the assembled bread to the 350°F oven and bake for another 5 minutes or until the cheese is fully melted and bubbly.
  6. Serve: Remove from oven, slice the bread into 2-3 inch pieces, and serve warm for a rich and satisfying meal or appetizer.
