These Teriyaki Steak Bites are a quick and flavorful dish perfect as an appetizer, snack, or main course. Tender steak pieces marinated in teriyaki sauce are pan-seared to achieve a crispy, caramelized exterior with a juicy interior. Easily prepared in a skillet, they can be customized to your preferred doneness and served with your favorite sides or dipping sauces.

Ingredients

Steak Bites

  • 1 lb steak, cut into bite-sized pieces
  • 2/3 cup teriyaki sauce, divided
  • 1 to 2 tablespoons cooking oil (avocado, vegetable, or olive oil recommended)

Instructions

  1. Prepare the Steak: Transfer the steak to a cutting board and use a sharp knife to chop it into bite-sized pieces for even cooking and easy eating.
  2. Marinate the Steak: Place the steak pieces in a large zip lock bag with ½ cup of teriyaki sauce. Seal the bag and massage it gently to coat all pieces evenly. Refrigerate for at least 15 minutes, ideally 1 to 3 hours, or up to 24 hours for maximum flavor infusion.
  3. Heat the Skillet: When ready to cook, heat 1 to 2 tablespoons of your preferred cooking oil in a large 12-inch cast iron skillet over medium-high heat until the pan is sizzling hot. This ensures a good sear and crispy exterior.
  4. Cook the Steak Bites: Carefully place the marinated steak pieces on the hot skillet, allowing excess marinade to drip off. Cook each side for approximately 2 minutes on two sides for medium-rare, adjusting cooking time according to your desired doneness. For a crisp crust, maintain high heat and avoid overcrowding the pan.
  5. Caramelize with Teriyaki Sauce: For a glazed, caramelized finish, add the remaining teriyaki sauce to the skillet towards the end of cooking. Stir or flip the bites until the sauce thickens and coats the steak beautifully.
  6. Serve: Plate the teriyaki steak bites with extra teriyaki or stir-fry sauce on the side for dipping. Garnish with sesame seeds and green onions if desired. Pair with your favorite sides or serve as a flavorful appetizer.

Notes

  • Use a very hot skillet to achieve a nicely seared crust while keeping the inside juicy.
  • For best results, do not overcrowd the pan; cook in batches if necessary.
  • Adjust marinating time based on schedule—longer marinating enhances flavor.
  • If you prefer medium or well-done steak bites, cook on medium heat for longer to develop a glaze without burning.
  • Garnish with sesame seeds and green onions for extra flavor and presentation.
