Ingredients

Sweet Potatoes

Ground Beef

Instructions

  1. Preheat and Roast Sweet Potatoes: Preheat your oven to 400°F (200°C). In a bowl, toss the cubed sweet potatoes with olive or avocado oil, sea salt, black pepper, and garlic powder until evenly coated. Spread them out evenly on a baking sheet. Roast in the oven for 20 minutes, flipping the potatoes halfway through cooking to ensure they brown evenly. Alternatively, you can use an air fryer to cook the sweet potatoes if preferred.
  2. Cook Ground Beef: While the sweet potatoes roast, heat a skillet over medium-high heat. Add the lean ground beef and break it apart with a spatula. Cook the beef until browned and fully cooked, approximately 6-7 minutes. Stir in the taco seasoning, mixing well to distribute the flavors. If the mixture seems dry, add a small amount of water (about 2 tablespoons) to maintain moisture and continue cooking for another minute.
  3. Assemble the Bowls: Divide the roasted sweet potatoes evenly among four serving bowls. Top each portion with the cooked ground beef. Spoon cottage cheese generously over the beef and potatoes. Add chopped avocado to each bowl, then drizzle hot honey over everything for a hint of sweetness. Add hot sauce to taste for extra spice, and optionally garnish with pickled onions or hot and sweet jalapeños for additional flavor and texture.
