Summer Peach Fruit Salad is a refreshing mix of juicy peaches, vibrant berries, and a touch of honey, creating a sweet and tangy treat perfect for summer gatherings, BBQs, or as a healthy snack. This vegan and gluten-free salad is easy to make, customizable, and packed with fresh, seasonal flavors.

Ingredients

4 ripe peaches, sliced

1 cup strawberries, hulled and sliced

1 cup blueberries

1/2 cup blackberries or raspberries (optional)

1 tablespoon fresh mint, chopped (optional)

2 tablespoons honey or maple syrup (adjust to taste)

Juice of 1 lime or lemon (optional, for added brightness)

Instructions

  1. Prepare the Fruit: Wash and slice the peaches, hull and slice the strawberries, and wash the blueberries and blackberries (or raspberries). If using other fruits, chop them into bite-sized pieces.
  2. Combine the Fruit: In a large mixing bowl, combine the sliced peaches, strawberries, blueberries, blackberries, and any other fruits you’re using.
  3. Add Sweetener and Lime Juice: Drizzle honey or maple syrup over the fruit for sweetness. Add lime or lemon juice for a zesty kick and to prevent browning.
  4. Toss Gently: Use a spoon to gently toss the fruit, ensuring an even coat of honey and lime juice without mashing the berries.
  5. Add Fresh Mint: Sprinkle the chopped fresh mint over the fruit salad and toss again to distribute the flavor.
  6. Chill and Serve: Refrigerate for about 30 minutes to allow flavors to meld. Serve cold for a refreshing treat!
  7. Enjoy: Serve in bowls or on a large platter. Garnish with extra mint leaves if desired.

Notes

For a crunchy texture, sprinkle chopped nuts like almonds, walnuts, or pecans on top of the salad.

Add shredded coconut for a tropical twist or Greek yogurt for a creamy variation.

Feel free to swap in other fruits like mango, kiwi, or pineapple based on what’s in season.
