Ingredients

For the Biscuits:

2 1/2 cups all-purpose flour

1 tablespoon baking powder

1 teaspoon salt

1/2 teaspoon baking soda

1/4 cup unsalted butter, cold and cubed

1/4 cup vegetable oil

3/4 cup buttermilk

1/2 cup cooked onion, finely chopped

1/4 cup fresh sage, chopped

1 tablespoon fresh thyme, chopped

2 cloves garlic, minced

For the Herb Butter:

1/4 cup unsalted butter, melted

1 tablespoon fresh sage, chopped

1 tablespoon fresh thyme, chopped

1/2 teaspoon garlic powder

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, baking powder, salt, and baking soda.
  3. Cut the cold, cubed butter into the dry ingredients using a pastry cutter or your hands until the mixture resembles coarse crumbs.
  4. Add the vegetable oil and mix well.
  5. Stir in the buttermilk until just combined—be careful not to overmix.
  6. Fold in the cooked onion, sage, thyme, and minced garlic. The dough should be somewhat sticky, but if it’s too dry, add a little more buttermilk, a tablespoon at a time.
  7. Turn the dough out onto a floured surface and gently pat it into a 1-inch thick rectangle.
  8. Use a biscuit cutter to cut out biscuits and place them onto the prepared baking sheet, leaving space between each one.
  9. Bake for 12-15 minutes, or until the biscuits are golden brown and cooked through.
  10. While the biscuits are baking, mix the melted butter, sage, thyme, and garlic powder together in a small bowl.
  11. As soon as the biscuits come out of the oven, brush them generously with the herb butter for an added layer of flavor.

Notes

Add a handful of grated cheese (cheddar or parmesan) to the dough for an extra cheesy twist.

Substitute the onion and garlic with shallots for a milder flavor.

For a more traditional stuffing flavor, fold in some finely chopped, cooked sausage or crumbled bacon.
