Ingredients

For the Lemon Cookie Dough:

1 1/2 cups all-purpose flour

1 teaspoon baking powder

1/4 teaspoon salt

1/2 cup unsalted butter, softened

1 cup granulated sugar

1 large egg

1 tablespoon lemon zest (about 1 lemon)

2 tablespoons fresh lemon juice

1 teaspoon vanilla extract

For the Lemon Cream Filling:

4 oz cream cheese, softened

1/4 cup powdered sugar

1 tablespoon lemon juice

1/2 teaspoon lemon zest

For Rolling:

1/4 cup granulated sugar (for rolling the cookie dough balls)

Instructions

  1. Make the Lemon Cookie Dough: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the egg, lemon zest, lemon juice, and vanilla extract, and mix until well combined. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms. The dough should be soft but firm enough to roll into balls.
  2. Make the Lemon Cream Filling: In a small bowl, beat together the softened cream cheese, powdered sugar, lemon juice, and lemon zest until smooth and creamy.
  3. Assemble the Cookies: Scoop out about 1 tablespoon of dough and flatten it slightly with your hands. Place a small dollop of the lemon cream filling in the center (about 1 teaspoon), then top with another tablespoon of dough and seal the edges by pinching them together. Roll the filled dough into a ball. Roll the dough balls in granulated sugar, then place them on the prepared baking sheet, about 2 inches apart.
  4. Bake the Cookies: Bake for 10-12 minutes, or until the edges of the cookies are lightly golden. The center should still be soft. Don’t overbake, as you want the cookies to stay soft and chewy.
