This Spinach Puff Pastry recipe combines flaky, golden puff pastry with a savory filling of sautéed spinach, garlic, ricotta, and mozzarella cheeses. Perfect as a delicious appetizer or snack, these bite-sized pastries are simple to prepare and bake to perfection in under 30 minutes, delivering a warm and comforting treat for any occasion.

Ingredients

Pastry

  • 1 sheet puff pastry (thawed)

Filling

  • 2 cups fresh spinach (chopped)
  • 1 garlic clove (minced)
  • ¼ teaspoon sea salt
  • ¼ teaspoon ground black pepper
  • ½ cup ricotta cheese
  • ¼ cup shredded mozzarella
  • 1 egg (beaten)

Instructions

  1. Preheat Oven: Preheat the oven to 400 degrees F and line a baking sheet with parchment paper to prevent sticking and ensure even baking.
  2. Sauté Spinach: In a medium skillet over medium heat, sauté the chopped spinach with minced garlic, sea salt, and ground black pepper for about 2 minutes until the spinach is wilted. Remove from heat and allow the mixture to cool completely.
  3. Prepare Puff Pastry: On a lightly floured surface, roll out the thawed puff pastry sheet. Using a 2-inch biscuit cutter, cut out 10 equal circles. Alternatively, you can cut the pastry into squares if preferred.
  4. Assemble Pastries: Place 1 tablespoon of ricotta cheese in the center of each puff pastry circle. Spoon 1 to 2 tablespoons of the cooled spinach mixture over the ricotta, then sprinkle with shredded mozzarella cheese.
  5. Egg Wash: Brush the tops of each assembled pastry with the beaten egg. This step ensures a golden, glossy finish when baked.
  6. Bake: Arrange the prepared pastries on the lined baking sheet, ensuring they are spaced evenly. Bake in the preheated oven for 18 to 20 minutes or until the pastries are puffed and golden brown.
  7. Cool and Serve: Remove the pastries from the oven and let them cool slightly on a wire rack. Serve warm for the best flavor and texture.

Notes

  • Ensure the spinach mixture is cooled before assembling to prevent the puff pastry from becoming soggy.
  • You can prepare the pastries ahead of time and refrigerate them before baking; just add a couple of extra minutes to the baking time if baking from cold.
  • For a vegetarian option, this recipe already applies as it contains no meat.
  • To make cleaning easier, use parchment paper on the baking sheet.
  • Feel free to add herbs like nutmeg or basil to the spinach mixture for added flavor.
