Spinach & Feta Stuffed Salmon Pinwheels are an elegant, flavorful dish that’s perfect for a special dinner or a weeknight treat. Ingredients

4 salmon fillets (skinless, boneless)

1 cup fresh spinach (chopped)

1/2 cup feta cheese (crumbled)

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon dried oregano

Salt and pepper to taste

Lemon wedges (for serving)

Fresh parsley (optional, for garnish)

Instructions

  1. Prepare the Spinach Filling: In a small skillet, heat a teaspoon of olive oil over medium heat. Add the chopped spinach and sauté for 2-3 minutes until wilted. Remove from heat and allow to cool slightly. Once cooled, mix the sautéed spinach with the crumbled feta cheese, garlic powder, oregano, salt, and pepper. Stir until well combined.
  2. Prepare the Salmon Fillets: Lay the salmon fillets on a flat surface, skin side down. Using a sharp knife, carefully slice each fillet horizontally to create a pocket (be careful not to slice all the way through). Season both the inside and outside of the salmon with salt, pepper, and a drizzle of olive oil.
  3. Stuff the Salmon Pinwheels: Divide the spinach and feta mixture evenly among the salmon fillets. Spoon the mixture into the pocket of each fillet, then gently roll up the fillet to form a pinwheel shape. Secure the pinwheels with toothpicks or kitchen twine if necessary.
  4. Cook the Salmon Pinwheels: Preheat the oven to 375°F (190°C). Heat a skillet over medium-high heat and add a tablespoon of olive oil. Once the oil is hot, carefully place the salmon pinwheels in the skillet and sear for 2-3 minutes on each side until golden brown. Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the salmon is cooked through and flakes easily with a fork.
