These Spinach Apple Puffs are a light and nutritious snack combining the natural sweetness of applesauce with the fresh flavor of spinach. Rolled oats add texture and fiber, while a hint of cinnamon and baking powder give these puffs a delightful aroma and gentle rise. Perfectly baked to golden perfection, they make a healthy, easy-to-make treat for any time of day.

Ingredients

Main Ingredients

  • ½ cup old fashioned rolled oats
  • ½ cup unsweetened applesauce
  • ¼ cup packed fresh spinach
  • 1 egg yolk
  • ½ tablespoon mild tasting oil (such as vegetable or canola oil)
  • ½ teaspoon baking powder
  • ¼ teaspoon ground cinnamon

Instructions

  1. Preheat the oven: Set your oven to 350 degrees Fahrenheit (180 degrees Celsius) to ensure it reaches the perfect temperature for baking your puffs.
  2. Blend ingredients: Combine rolled oats, unsweetened applesauce, spinach, egg yolk, oil, baking powder, and cinnamon in a blender or food processor. Blend until the mixture is completely smooth and evenly combined.
  3. Prepare for piping: Transfer the blended mixture into a piping bag or a resealable plastic bag (such as a Ziploc) and cut off a small corner to create a piping nozzle.
  4. Pipe and bake: Pipe out small dime-sized circles onto a baking sheet lined with parchment paper. Place them in the preheated oven and bake at 350°F for 10 minutes.
  5. Finish baking in residual heat: After the initial 10 minutes, turn off the oven but leave the puffs inside. Let them sit for an additional 12 to 15 minutes, allowing the edges to brown slightly and the puffs to finish cooking through the residual heat.
  6. Cool and store: Remove the puffs from the oven and allow them to cool completely. Store in an airtight container at room temperature for freshness.

Notes

  • Make sure to pack the spinach tightly to get the right quantity.
  • You can substitute the mild tasting oil with melted coconut oil or olive oil for a different flavor profile.
  • Check the puffs during residual baking to avoid over-browning.
  • These puffs are best consumed within 2-3 days for optimal freshness.
  • For a vegan version, replace the egg yolk with a flaxseed egg or mashed banana, keeping in mind texture changes.
