  • 2 tablespoons corn starch

Instructions

  1. Prepare the sauce: In a bowl, combine ketchup, soy sauce, rice vinegar, sugar (if using), minced garlic, homemade chili oil, water, and corn starch. Stir well until the corn starch is fully dissolved to create an even sauce mixture.
  2. Heat the oil and fry the eggs: Drizzle a generous amount of oil into a pan and heat it over medium-high heat. Once the oil is hot, carefully add the eggs and pan-fry for 2 to 3 minutes or until the edges turn crispy and golden brown.
  3. Simmer the sauce with eggs: Pour the prepared sauce over the fried eggs in the pan. Allow it to simmer for another 2 to 3 minutes, stirring gently, until the sauce thickens and clings to the eggs.
