Ingredients

Brussels Sprouts

  • 1 lb Brussels sprouts, trimmed and halved
  • 1 tablespoon olive oil

Spicy Sauce

  • 1 tablespoon chili garlic paste
  • 1 tablespoon soy sauce
  • 1 teaspoon lime juice

Taco Components

  • 6 small corn or flour tortillas
  • 1 small avocado, sliced
  • ¼ cup crumbled feta cheese
  • Cilantro for garnish

Instructions

  1. Preheat the oven and baking sheet: Place a baking sheet in the oven and preheat to 450°F (232°C) to ensure it’s hot and ready for roasting the Brussels sprouts.
  2. Coat Brussels sprouts with oil: Gently drizzle the olive oil over the trimmed and halved Brussels sprouts, spreading them onto a plate and tossing to evenly coat without using excess oil.
  3. Arrange Brussels sprouts on hot pan: Carefully remove the preheated baking sheet from the oven and spread the Brussels sprouts in a single layer to promote even roasting and crispiness. Use caution as the pan will be very hot.
  4. Roast sprouts initially: Place the pan back into the oven and bake for 12 minutes to begin browning and crisping the sprouts.
  5. Shake and continue roasting: After 12 minutes, give the baking sheet a gentle shake to turn and redistribute the sprouts, then bake for an additional 2 to 3 minutes until they reach a golden-brown color.
  6. Prepare the chili garlic sauce: While the sprouts roast, whisk together the chili garlic paste, soy sauce, and lime juice in a small bowl to create a vibrant and spicy sauce.
  7. Toss sprouts with sauce: Remove the roasted Brussels sprouts from the oven and carefully drizzle the prepared chili garlic sauce evenly over them, tossing gently to coat.
  8. Assemble the tacos: Warm the tortillas if desired, then fill each with a generous scoop of the spicy Brussels sprouts. Top with sliced avocado, crumbled feta, and fresh cilantro.
