1 cup peanut butter (smooth or crunchy, depending on preference)
1 cup sugar
2 large eggs
1 teaspoon vanilla extract
1 ½ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
½ cup milk (or any milk alternative)
½ teaspoon cinnamon (optional, for added flavor)
Instructions
Preheat the oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
In a large mixing bowl, combine the peanut butter and sugar. Beat until smooth and creamy.
Add the eggs one at a time, mixing well after each. Stir in vanilla extract.
In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon (if using).
Gradually add the dry ingredients to the wet mixture, alternating with milk. Mix until combined.
Pour the batter into the prepared loaf pan and smooth the top.
Bake for 50-60 minutes, or until a toothpick comes out clean.
Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
This recipe makes one loaf, typically serving 8-10 slices.
If using natural peanut butter, the bread may be denser.
For extra flavor, add chocolate chips, honey/maple syrup, or chopped nuts.
Store the bread at room temperature in an airtight container for 2-3 days, or wrap in plastic for up to a week in the fridge.
Freeze the bread for 2-3 months by wrapping it tightly and placing it in a freezer-safe bag.
