Smoked Jalapeño Popper Chicken Bombs are juicy chicken bites stuffed with creamy, cheesy jalapeño filling, then smoked to perfection. They’re bold, flavorful, and perfect as appetizers, game day snacks, or a main dish.

Ingredients

2 large boneless, skinless chicken breasts (about lb), cut into 12 pieces

4 oz cream cheese, softened

½ cup shredded cheddar or Monterey Jack cheese

2 jalapeños, seeded and finely chopped

½ teaspoon garlic powder

½ teaspoon onion powder

½ teaspoon smoked paprika

Salt and black pepper, to taste

Olive oil or neutral oil, for brushing

Toothpicks or skewers for securing

Instructions

  1. In a bowl, mix cream cheese, shredded cheese, jalapeños, garlic powder, onion powder, salt, and pepper until smooth.
  2. Flatten each piece of chicken slightly. Place a spoonful of the cheese mixture in the center and fold the chicken around it. Secure with a toothpick or skewer.
  3. Brush each chicken bomb with oil and season with smoked paprika, salt, and pepper.
  4. Preheat smoker to 225°F (107°C). Place chicken bombs on the rack and smoke for 60–75 minutes until cooked through.
  5. Let rest for 5 minutes before serving. Serve warm with dipping sauce if desired.

Notes

Swap jalapeños with mild green chiles for less heat.

Add scallions, herbs, or lime juice for freshness.

Brush with chipotle glaze near the end for extra flavor.

Oven-bake at 400°F (204°C) for 25–30 minutes as an alternative.

Assemble ahead and store in fridge or freezer for meal prep.
