Instructions

  1. Preheat and prepare baking sheet: Place a rimmed baking sheet in the oven and preheat the oven to 425ºF to get the sheet hot for roasting.
  2. Prep the carrots: Peel the carrots and cut them into 1 1/2 to 2-inch pieces crosswise. For carrots less than 3/4 inch in diameter, cut in half lengthwise; for thicker carrots, cut into quarters lengthwise to ensure even cooking.
  3. Steam the carrots: Place the carrot pieces and 2 tablespoons water in a large microwave-safe bowl. Cover tightly with plastic wrap, leaving a vent for steam to escape, and microwave on HIGH for 5 to 6 minutes until the carrots are tender when pierced with a knife.
  4. Season the carrots: Carefully remove the plastic wrap to release steam and drain any excess water from the bowl. Add 1 tablespoon olive oil, 1/4 teaspoon kosher salt, and 1/4 teaspoon freshly ground black pepper to the carrots and toss to coat evenly.
  5. Smash the carrots: Arrange the seasoned carrots in a single layer on the hot baking sheet. Use the bottom of a glass or metal measuring cup to press down on the carrots to flatten and crack them slightly, increasing the surface area for roasting.
  6. Add Parmesan and roast: Evenly sprinkle the carrots with 3 tablespoons grated Parmesan cheese. Roast in the oven for 13 to 15 minutes, until the cheese is melted, browned, and the edges of the carrots are crispy and caramelized.
  7. Rest and serve: Remove the baking sheet from the oven and let the carrots cool for 5 minutes on the sheet. This resting time allows them to crisp up further before serving.
