Smashed Green Onion Potato Bites are crispy, golden potato puffs bursting with garlicky goodness and fresh green onion flavor. This easy-to-make recipe transforms baby potatoes into delicious, crunchy bites, perfect as a snack, appetizer, or a unique side dish. Simple ingredients and minimal prep make these irresistible potatoes a go-to for any gathering or weeknight dinner.

Ingredients

Potatoes

  • 500g baby potatoes (or small Yukon gold potatoes)

Flavorings

  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 3 green onions, thinly sliced
  • 1 tsp sea salt
  • ½ tsp black pepper

Optional Garnish

  • Sprinkle of Parmesan cheese or fresh herbs (such as parsley or chives)

Instructions

  1. Boil the Potatoes: Place the baby potatoes in a pot of salted water. Bring them to a boil and cook until fork-tender, about 10–12 minutes. Drain the potatoes and allow them to cool slightly so they’re easier to handle.
  2. Preheat & Prepare: Preheat your oven to 220°C (425°F). Arrange the cooked potatoes on a baking sheet lined with parchment paper for easy cleanup.
  3. Smash the Potatoes: Using the bottom of a glass or a potato masher, gently press down on each potato to flatten them to about 1 cm thickness. Be careful not to break them apart completely—just a good ‘smash.’
  4. Season: Drizzle the olive oil evenly over the smashed potatoes. Sprinkle minced garlic, sliced green onions, sea salt, and black pepper across the tops of the potatoes for flavor in every bite.
  5. Bake: Place the baking sheet in the preheated oven and bake for 20–25 minutes, until the potatoes are golden and crispy on the edges.
  6. Garnish & Serve: If desired, sprinkle with Parmesan cheese or fresh herbs right after baking. Serve the potato bites hot as a snack, appetizer, or side dish.

Notes

  • For extra crispiness, increase the oven temperature slightly at the end or broil for 1–2 minutes, watching closely.
  • Small Yukon gold potatoes can be used if baby potatoes are unavailable.
  • Try adding smoked paprika, chili flakes, or lemon zest for a flavor twist.
  • Best enjoyed fresh, but leftovers can be reheated in the oven.
