This Slow Cooker Marry Me Chicken is a creamy, flavorful dish featuring tender chicken breast cooked low and slow with sun-dried tomatoes, garlic, and aromatic herbs. Ingredients

Chicken and Coating

  • 650 g Skinless, boneless chicken breast (about 4 breasts, cut into bite-sized pieces)
  • 30 g Plain flour
  • Sea salt and freshly ground black pepper (to taste)

Slow Cooker Mixture

  • 3 Garlic cloves (peeled and crushed)
  • 100 g Sun-dried tomatoes (drained and very finely chopped)
  • 1 tsp Dried oregano
  • 2 tsp Paprika
  • 300 ml Boiling water
  • 1 Chicken stock cube (undiluted, crumbled)

Finishing Ingredients

  • 100 g Cream cheese
  • 50 g Parmesan (grated)
  • 15 g Fresh basil leaves (chopped)

Instructions

  1. Prepare the Chicken: Toss the cut chicken pieces in the plain flour combined with plenty of salt and freshly ground black pepper until each piece is well coated. This helps to thicken the sauce during cooking.
  2. Add Ingredients to Slow Cooker: Place the coated chicken into the slow cooker and add the crushed garlic, finely chopped sun-dried tomatoes, dried oregano, paprika, the crumbled chicken stock cube, and boiling water. Stir gently to combine the ingredients.
  3. Cook the Chicken: Cover and cook on HIGH for 2.5 to 3 hours or on LOW for 5 to 6 hours, until the chicken is fully cooked and tender.
  4. Finish the Sauce: Just before serving, stir in the cream cheese, grated parmesan, and chopped fresh basil until the sauce is smooth and creamy. Adjust seasoning with salt and pepper if needed, then serve hot.

Notes

  • Ensure the chicken is cooked through by checking it reaches an internal temperature of 75°C (165°F).
  • Use fresh basil for a vibrant herbal flavor but dried basil can substitute if fresh is unavailable.
  • The cream cheese can be swapped with full-fat Greek yogurt for a lighter finish.
  • Serve over pasta, rice, or with crusty bread to soak up the delicious sauce.
