This Slow Cooker Beef and Broccoli recipe is a convenient and delicious way to enjoy a classic takeout favorite at home. Perfect for busy weeknights, this dish requires minimal prep and slow cooks tender beef with flavorful sauce and broccoli, delivering a healthy, hearty meal with minimal effort.

Ingredients

Sauce and Base

  • 1 cup (237 ml) beef consommé or beef broth
  • ½ cup (118 ml) low sodium soy sauce
  • ⅓ cup (73 g) dark brown sugar
  • 1 tablespoon sesame oil
  • 3 cloves garlic, minced

Beef

  • 1 pound (454 g) boneless beef chuck roast, sliced into thin strips

Thickening and Vegetables

  • 2 tablespoons cornstarch or arrowroot powder
  • 4 tablespoons of liquid from slow cooker
  • Frozen broccoli florets, approximately 3 cups

To Serve

  • Cooked white rice

Instructions

  1. Prepare the sauce: In the insert of the slow cooker, whisk together beef consommé or beef broth, soy sauce, dark brown sugar, sesame oil, and minced garlic until well combined.
  2. Add the beef: Gently place the thinly sliced beef chuck roast into the liquid and toss lightly to coat all pieces evenly with the sauce.
  3. Start slow cooking: Cover the slow cooker and set it on low heat. Cook for 4 to 6 hours until the beef is tender and flavorful.
  4. Thicken the sauce and add broccoli: In a small bowl, whisk cornstarch with 4 tablespoons of the cooking liquid taken from the slow cooker to create a slurry. Pour this mixture back into the slow cooker, stir to combine, then add the frozen broccoli florets. Continue cooking on low for another 30 minutes to allow the sauce to thicken and the broccoli to cook through.
  5. Serve: Spoon the beef and broccoli over freshly cooked white rice and serve hot for a satisfying meal.

Notes

  • If the sauce does not thicken to your liking, you can mix an additional teaspoon of cornstarch with a small amount of cold water and stir it into the slow cooker, cooking for another 10-15 minutes.
  • Use low sodium soy sauce to control salt levels in the dish.
  • Slicing the beef thinly helps it cook evenly and become tender in the slow cooker.
  • Frozen broccoli is convenient and that quantity can be adjusted based on preference.
  • You can substitute arrowroot powder for cornstarch if you want a gluten-free thickener.
