Ingredients

For the Chicken:

  • Grilled Sesame Chicken (see recipe)

For the Salad:

  • 4 cups shredded green cabbage
  • 2 cups shredded red cabbage
  • 1/2 cup diced green onion
  • 3/4 cup freshly diced cilantro
  • 1 cup shredded carrots (bagged or cut into matchsticks)
  • 1 red bell pepper, thinly julienned
  • 1 jalapeno, seeded and diced

For the Dressing:

  • 1 batch Sesame Ginger Dressing (see recipe)

For Serving/Garnish:

  • 1/3 cup toasted sliced almonds
  • 1/3 cup roasted cashew halves
  • Sesame seeds
  • Extra cilantro
  • Extra green onion
  • A few jalapeno slices
  • Optional: Crispy wonton strips

Instructions

  1. Marinate the Chicken: Prepare and marinate the chicken using the grilled sesame chicken recipe to infuse it with savory sesame flavors.
  2. Prepare the Dressing: Make the sesame ginger dressing as per the recipe instructions and set it aside.
  3. Assemble the Salad: In a large bowl, combine shredded green cabbage, shredded red cabbage, diced green onion, freshly diced cilantro, shredded carrots, julienned red bell pepper, and diced jalapeno. Pour the sesame ginger dressing over the vegetable mixture and toss thoroughly to coat all ingredients evenly. Cover and set aside while cooking the chicken.
  4. Cook the Chicken: Bake or grill the marinated sesame chicken according to the instructions in the chicken recipe until fully cooked and juicy.
  5. Serve the Salad: Spread the tossed salad on a large platter. Slice the cooked sesame chicken and arrange it on top or serve on the side. Garnish the salad with toasted sliced almonds, roasted cashews, a sprinkle of sesame seeds, extra cilantro, chopped green onion, and a few jalapeno slices. Optionally, sprinkle crispy wonton strips for added texture. Serve immediately and enjoy.
