This Sausage Gravy Biscuit Breakfast Pizza transforms classic Southern breakfast elements into a sharable pizza, featuring a biscuit crust topped with creamy sausage gravy, scrambled eggs, and melted cheese. It’s perfect for brunch or weekend gatherings.

Ingredients

1 can (16 oz) refrigerated biscuit dough (about 8 biscuits)

1 pound ground breakfast sausage (mild or spicy)

3 tablespoons all-purpose flour

2 cups whole milk

Salt and freshly ground black pepper, to taste

Pinch of nutmeg (optional)

4 large eggs

1 cup shredded cheddar cheese (or cheddar-Monterey Jack mix)

1 tablespoon butter

Optional garnish: chopped chives or green onions, hot sauce

Instructions

  1. Preheat oven to 375 °F (190 °C). Arrange biscuits in a greased 12″ round or rectangular pizza pan and flatten to form a connected crust. Bake for 10 minutes until lightly golden. Set aside.
  2. In a skillet, cook sausage over medium heat until browned. Sprinkle flour over sausage and stir to combine. Gradually add milk, stirring until thickened. Season with salt, pepper, and nutmeg. Remove from heat.
  3. In a bowl, beat eggs with a pinch of salt. Melt butter in a nonstick skillet and gently scramble eggs until just set. Remove from heat.
  4. Spread sausage gravy over the pre-baked biscuit crust. Layer scrambled eggs over the gravy, then top with shredded cheese.
  5. Return pizza to the oven and bake for 8–10 minutes, until cheese is melted and bubbly.
  6. Remove from oven and garnish with chives or green onions. Add hot sauce if desired. Slice and serve warm.

Notes

Partially baking the biscuit crust helps prevent sogginess.

Use spicy sausage or add jalapeños for heat.
