Warm, cheesy, and savory handheld roll-ups filled with scrambled eggs, sausage, and cheese—perfect for quick breakfasts or make-ahead meals.

Ingredients

4 large eggs

4 flour tortillas (8-inch)

1 cup cooked breakfast sausage, crumbled

1 cup shredded cheddar cheese

2 Tbsp milk (optional, for fluffier eggs)

Salt and pepper, to taste

1 Tbsp butter or oil for cooking

Instructions

  1. In a bowl, whisk eggs, milk (if using), salt, and pepper until smooth.
  2. Heat butter or oil in a skillet over medium heat. Pour in the egg mixture and cook, stirring gently, until soft-scrambled and just set. Remove from heat.
  3. Lay out tortillas and evenly distribute scrambled eggs, crumbled sausage, and shredded cheese down the center of each.
  4. Fold in the short ends of each tortilla, then roll tightly to enclose the filling.
  5. Optional: Heat a clean skillet over medium heat and cook roll-ups seam-side down for 1–2 minutes per side until golden and cheese is melted.
  6. Slice in half (if desired) and serve warm with salsa, hot sauce, or fresh fruit on the side.

Notes

You can warm tortillas before filling to prevent cracking.

Add veggies like peppers, spinach, or green onions for extra flavor and nutrition.

To make them grain-free, use gluten-free or low-carb tortillas.

Fry or poach eggs instead of scrambling, if preferred—adjust assembly accordingly.

Add sauces (e.g., salsa or avocado crema) after reheating to avoid soggy wraps.

Assemble ahead and refrigerate for up to 4 days, or freeze individually for up to 2 months.
