A hearty, Tex-Mex-inspired soup made with seasoned ground meat, beans, corn, tomatoes, and bold spices—perfect for a cozy, flavorful, and easy-to-make meal.

Ingredients

1 lb ground beef (or ground turkey/chicken)

1 medium onion, chopped

2 garlic cloves, minced

1 packet ranch seasoning

1 packet taco seasoning

1 can pinto beans, undrained

1 can black beans, undrained

1 can kidney beans, undrained

1 can corn, drained

12 cans diced tomatoes (with or without green chiles)

12 cups water or beef/chicken broth

Salt, black pepper, and cumin to taste (optional)

Garnishes: shredded cheese, sour cream, avocado slices, chopped green onion or cilantro, lime wedges

Instructions

  1. Brown ground meat with onion and garlic in a large pot over medium heat. Drain excess fat.
  2. Stir in ranch seasoning, taco seasoning, and cumin if using.
  3. Add pinto beans, black beans, kidney beans (all undrained), corn (drained), diced tomatoes (with juices), and water or broth.
  4. Bring mixture to a boil, then reduce heat to low. Cover and simmer for at least 30 minutes, or up to 2 hours for deeper flavor.
  5. Taste and adjust seasoning as needed.
  6. Ladle into bowls and top with desired garnishes. Serve hot.

Notes

Use ground turkey or chicken for a leaner version.

Make it vegetarian by omitting meat and using vegetable broth and extra veggies.

Add cream cheese during simmering for a creamy variation.

For slow cooker: brown meat first, then combine all ingredients and cook on low for 6–8 hours.

Adjust spice level with jalapeños, hot sauce, or spicy seasonings.
