Salted Dark Chocolate Pistachio Quinoa Crunch Bars are a wholesome, indulgent snack packed with crispy quinoa, rich dark chocolate, crunchy pistachios, and a sprinkle of sea salt for the perfect sweet-savory balance.

Ingredients

1/2 cup quinoa, cooked and cooled

1/2 cup pistachios, chopped

1/2 cup dark chocolate chips (or chopped dark chocolate)

1/4 cup honey or maple syrup

1/4 cup almond or peanut butter

1 tsp vanilla extract

1/4 tsp sea salt (for sprinkling)

1/4 cup shredded coconut (optional)

Instructions

  1. Cook the quinoa according to package instructions. Spread it out to cool completely.
  2. Chop pistachios into small pieces.
  3. Melt the dark chocolate in 30-second intervals in the microwave, stirring between each, or melt over a double boiler.
  4. In a bowl, whisk honey (or maple syrup), nut butter, and vanilla extract until smooth.
  5. Stir in the quinoa, pistachios, and shredded coconut (if using) until evenly coated.
  6. Add the melted chocolate to the mixture and mix thoroughly.
  7. Press the mixture into a parchment-lined 8×8 or 9×9 pan, spreading it evenly.
  8. Refrigerate for 1–2 hours until firm.
  9. Sprinkle sea salt on top, cut into bars or squares, and serve.
