Rotel Cream Cheese Sausage Balls are the perfect combination of savory sausage, creamy cheese, and a little kick from Rotel tomatoes. They’re easy to make, flavorful, and always a crowd-pleaser.

Ingredients

1 lb ground breakfast sausage (mild or spicy, based on preference)

1 package (8 oz) cream cheese, softened

1 can (10 oz) Rotel diced tomatoes with green chilies, drained

2 cups shredded cheddar cheese (or a mix of cheddar and Monterey Jack)

1 1/2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon salt (optional, since the sausage and cheese are salty)

1/4 teaspoon black pepper

Instructions

  1. Preheat the Oven: Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Mix the Ingredients: In a large bowl, combine the ground sausage, softened cream cheese, and drained Rotel. Mix until evenly combined.
  3. Add the Dry Ingredients: Add shredded cheese, flour, baking powder, garlic powder, onion powder, salt, and pepper. Mix until fully combined.
  4. Shape the Sausage Balls: Roll the mixture into small 1-inch balls and place them on the prepared baking sheet. You should get around 24-30 sausage balls.
  5. Bake: Bake for 20-25 minutes, or until the sausage balls are golden brown and cooked through. Test doneness by cutting one in half to ensure it’s fully cooked.
  6. Serve: Let the sausage balls cool slightly before serving. Enjoy with ranch dressing or your favorite dipping sauce.

Notes

Use spicy sausage for extra heat or add a teaspoon of hot sauce to the mixture.

Mix in chopped green onions or try a blend of cheeses like pepper jack or mozzarella for variety.
