Ingredients

Roasted Garlic

  • 6 cloves garlic
  • 1 teaspoon olive oil (or avocado oil)
  • Pinch kosher salt
  • Pinch freshly ground black pepper

Dressing

  • 1/2 cup mayonnaise
  • 1/2 cup plain Greek yogurt
  • 1/3 cup parmesan cheese (freshly grated)
  • 1/2 teaspoon freshly ground black pepper (more or less to taste)
  • 1/2 teaspoon kosher salt (or to taste)
  • 1 tablespoon lemon juice (freshly squeezed)
  • 4 to 6 tablespoons milk or water (for thinning out, as needed)

Instructions

  1. Preheat the Oven: Set your oven to 400℉ (200℃) to prepare for roasting the garlic.
  2. Prepare Garlic for Roasting: Place the garlic cloves on a sheet of foil. Drizzle with olive or avocado oil, then season with a pinch of kosher salt and freshly ground black pepper. Fold and crimp the foil to form a sealed pouch.
  3. Roast the Garlic: Lay the foil pouch on a rimmed baking sheet and roast in the preheated oven for 25 to 30 minutes, until the garlic is soft and fragrant.
  4. Mash the Roasted Garlic: Allow the garlic to cool enough to handle. Remove the skin from the cloves, then mash the roasted garlic with a fork on a plate or cutting board until smooth.
  5. Combine Dressing Ingredients: In a mixing bowl, add the mayonnaise, plain Greek yogurt, freshly grated parmesan cheese, mashed roasted garlic, kosher salt, freshly ground black pepper, and freshly squeezed lemon juice. Stir well until fully combined.
  6. Adjust Consistency: Thin the dressing with 4 to 6 tablespoons of milk or water, stirring until you reach your desired consistency for pouring or dipping.
