Ingredients

1 cup fresh lemon juice (about 45 lemons)

1/2 cup coconut water

1/4 cup lavender syrup (recipe below)

2 cups cold water

Ice cubes

Lemon slices, for garnish

Fresh lavender sprigs (optional, for garnish)

For the Lavender Syrup:

1/2 cup water

1/2 cup granulated sugar

2 tablespoons dried lavender buds

Instructions

  1. For the Lavender Syrup: In a small saucepan, combine the water and sugar. Heat over medium heat, stirring occasionally, until the sugar dissolves completely. Add the lavender buds and simmer for 5 minutes. Remove from heat and steep for an additional 5 minutes. Strain and let cool to room temperature before refrigerating.
  2. For the Mocktail: In a pitcher, mix fresh lemon juice, coconut water, lavender syrup, and cold water. Stir well to combine.
  3. Fill glasses with ice cubes and pour the lemonade mixture over the ice. Stir gently.
  4. Garnish with lemon slices and fresh lavender sprigs. Serve immediately and enjoy!

Notes

If you prefer a sweeter drink, add more lavender syrup to taste.

You can substitute the lavender syrup with honey, agave syrup, or another flavored syrup.

For extra freshness, add muddled mint leaves to the pitcher or garnish the drink with them.
