Ingredients

For the chicken skewers:

2 pounds boneless, skinless chicken breasts or thighs, cut into 1-inch cubes

3 tablespoons ranch seasoning mix (store-bought or homemade)

3 tablespoons olive oil

2 tablespoons garlic, minced

1 tablespoon lemon juice

¼ cup grated parmesan cheese

Salt and pepper, to taste

Skewers (wooden or metal)

For garnish:

Fresh parsley, chopped (optional)

Extra parmesan cheese, for sprinkling (optional)

Instructions

  1. In a large bowl, combine the ranch seasoning, olive oil, minced garlic, lemon juice, grated parmesan cheese, salt, and pepper. Whisk together until well blended.
  2. Add the chicken cubes to the marinade and toss until the chicken is evenly coated. Cover the bowl and refrigerate for at least 30 minutes, or up to 2 hours, to let the flavors meld.
  3. Preheat your grill to medium-high heat. If using wooden skewers, soak them in water for 20-30 minutes before threading to prevent burning.
  4. Once the chicken has marinated, thread the pieces onto the skewers, leaving a little space between each piece for even cooking.
  5. Place the skewers on the grill and cook for 6-8 minutes per side, or until the chicken reaches an internal temperature of 165°F (75°C) and is golden brown with grill marks.
