Quick Cottage Cheese Buns are soft, delicious bread buns made with cottage cheese and no yeast. These American-style buns are easy to prepare, combining simple ingredients like cottage cheese, eggs, flour, and leavening agents, then baked to golden perfection. Perfect for breakfast or a snack, they offer a delightful texture that is tender but not chewy, and can be enjoyed fresh or stored in an airtight container.

Ingredients

Main Ingredients

  • 1 1/2 cup cottage cheese (small curd, full fat)
  • 4 eggs
  • 1/2 tbsp vanilla extract
  • 1/2 cup sugar
  • 1/2 tbsp baking powder
  • 1 tsp baking soda
  • 1/2 tbsp white vinegar
  • 4 cup flour

Topping

  • 1 egg (to brush the tops)
  • 1/4 cup sugar (to sprinkle to tops)

Instructions

  1. Prepare the batter: Combine together cottage cheese, sugar, eggs and vanilla extract. Blend using a blender, mixer or a food processor until the mixture is smooth and well combined.
  2. Add leavening agents: In a small bowl, combine baking soda with white vinegar and add this mixture to the batter. Then add baking powder and flour gradually, mixing well. The dough will be sticky.
  3. Shape the buns: Flour your work surface generously to handle the sticky dough. Divide the dough into 24 equal pieces. Form each piece into a round bun shape and place them evenly spaced on a baking sheet.
  4. Prepare for baking: Brush the tops of each bun with a beaten egg for a shiny golden finish. Sprinkle each bun with some sugar to add a sweet crust.
  5. Bake the buns: Bake in a preheated oven at 350 °F (175 °C) for 20 minutes or until the buns become golden brown and cooked through.
  6. Cool and store: Allow the buns to cool to room temperature before serving. Store any remaining buns in an airtight container to keep them fresh.

Notes

  • The texture of these buns differs from yeast-based buns; they are soft but not as chewy.
  • Due to no yeast, the buns have a quicker preparation time and do not require rising.
  • Ensure to flour the work surface well to handle the sticky dough easily.
  • Brushing with egg wash and sprinkling sugar gives a nice glossy and sweet crust.
