  • 1 cup Medjool dates, pitted (approx 10 dates)
  • 3/4 cup almond flour
  • 1/2 cup desiccated coconut
  • 3 Tbsp raw cacao powder
  • 1 tsp peppermint extract (food grade)
  • 1/2 tsp vanilla extract
  • 2 Tbsp water
  • Pinch of sea salt

  • Extra desiccated coconut

Instructions

  1. Prep: Line a small baking sheet with parchment paper to prevent sticking and prepare for freezing the energy balls.
  2. Combine: Add Medjool dates, almond flour, desiccated coconut, raw cacao powder, peppermint extract, vanilla extract, water, and a pinch of sea salt to a large food processor. Pulse the mixture until it comes together and starts sticking, forming a large mass.
  3. Roll: Scoop about a tablespoon of the mixture with your hands and roll it into a smooth ball shape.
  4. Optional Toppings: If desired, place mini chocolate chips or extra coconut in a small dish. Roll each ball gently in your choice of topping to coat. Alternatively, leave balls plain without toppings.
  5. Freeze: Arrange the formed balls on the prepared baking sheet and continue until all mixture is used. Freeze the balls for 1 hour to firm up before serving or storing.
