Ingredients

1 sheet of puff pastry (store-bought or homemade)

1/2 cup light brown sugar, packed

1/2 cup corn syrup (light or dark)

1/4 cup unsalted butter, melted

1 teaspoon vanilla extract

1 large egg

1/4 teaspoon salt

1 cup pecans, chopped or whole (depending on your preference)

1 tablespoon milk or cream (optional, for brushing)

Instructions

  1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone baking mat for easy cleanup.
  2. Roll out the puff pastry sheet on a lightly floured surface. If it’s already the right size, you can leave it as is. If needed, cut the sheet into 9 squares (or 12 squares for mini bites).
  3. Gently press each square of puff pastry into a muffin tin, ensuring it fits snugly into each cup. You can also press the edges down slightly to form little cups for the filling.
  4. In a medium bowl, whisk together the brown sugar, corn syrup, melted butter, vanilla extract, egg, and salt until smooth and well combined.
  5. Stir in the chopped or whole pecans, making sure they’re evenly coated in the syrupy mixture.
  6. Spoon the pecan pie filling into each puff pastry cup, being careful not to overfill them. Leave a little space at the top for the filling to expand as it bakes.
  7. Brush the edges of the puff pastry with a little milk or cream for a golden, shiny finish.
  8. Bake in the preheated oven for 15-18 minutes, or until the puff pastry is golden brown and the filling is bubbly and set. Keep an eye on them to prevent over-baking.
  9. Let the pecan pie bites cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.
