Poor Man’s Husband Casserole is a hearty, budget-friendly dish featuring layers of tender egg noodles, rich tomato beef sauce, and a creamy mix of sour cream and cream cheese, all topped with melted cheddar cheese.

Ingredients

8 oz (225 g) wide egg noodles, cooked and drained

lb (680 g) ground beef

2 tsp garlic, minced

1 tsp Italian seasoning

¼ tsp salt

¼ tsp black pepper

2 cans (30 oz / ~850 ml) tomato sauce

1 tsp sugar

8 oz (225 g) cream cheese, softened

8 oz (225 g) sour cream

1½ cups (150 g) cheddar cheese, shredded

Instructions

  1. Preheat oven to 350 °F (175 °C) and grease a 9×13-inch baking dish.
  2. Cook egg noodles according to package directions until al dente, then drain and set aside.
  3. In a skillet over medium-high heat, brown the ground beef, breaking it apart. Drain excess fat.
  4. Add garlic, Italian seasoning, salt, pepper, and sugar to the meat. Cook for 1 minute until fragrant.
  5. Stir in tomato sauce and simmer for 5 minutes to blend flavors.
  6. In a bowl, mix cream cheese and sour cream until smooth.
  7. Layer half the noodles in the baking dish. Spread half the cream mixture, then half the meat sauce.
  8. Repeat layers: remaining noodles, cream mixture, and meat sauce.
  9. Top with ½ cup (50 g) shredded cheddar cheese.
  10. Bake for 20–25 minutes until cheese is melted and bubbly.
  11. Let rest 5–10 minutes before serving.

Notes

Top with buttery cracker crumbs for extra crunch.
