Ingredients

2 cups fresh pineapple, diced

1 large cucumber, sliced into thin rounds

1/4 cup red onion, thinly sliced

1/4 cup fresh cilantro, chopped (optional)

2 tablespoons olive oil

1 tablespoon lime juice (freshly squeezed)

1 teaspoon honey or agave syrup (optional)

Salt and pepper, to taste

Instructions

  1. In a large bowl, combine the diced pineapple, sliced cucumber, and red onion.
