Ingredients

For the Chicken Wraps:

  • 3 cups coleslaw mix
  • 1 cup shredded carrots

  • 6 large flour tortillas

  • 1 large garlic clove, minced

Instructions

  1. Make the Peanut Sauce: In a medium bowl, whisk together honey, olive oil, peanut butter, rice vinegar, soy sauce, sesame oil, pepper, salt, crushed red pepper flakes, grated ginger, and minced garlic until smooth and well combined.
  2. Prepare the Slaw Mixture: In a separate bowl, combine the coleslaw mix, shredded carrots, chopped cilantro, and roasted peanuts. Pour the prepared peanut sauce over the mixture and stir thoroughly to coat all ingredients. Let it sit for a few minutes for flavors to meld.
  3. Warm the Tortillas: Heat each tortilla in the microwave for about 10 seconds. This softens them, making them more pliable and easier to roll without breaking.
  4. Assemble the Wraps: Evenly divide the cooked chicken and dressed coleslaw mixture onto each warmed tortilla. Spread the filling lengthwise across the center.
  5. Roll the Wraps: Tightly roll each tortilla around the filling to form a wrap. Secure with toothpicks if needed to keep the wrap closed. Serve immediately or wrap for later enjoyment.
