Ingredients

1 cup unsalted peanut butter

1/2 cup unsalted butter, softened

3/4 cup granulated sugar

3/4 cup packed brown sugar

1 large egg

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1/2 teaspoon baking soda

1/4 teaspoon salt

1 1/2 cups mini marshmallows (or regular marshmallows, cut in half)

1/2 cup chocolate chips (optional, for extra richness)

Instructions

  1. Prepare the Oven and Baking Sheets: Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone mats.
  2. Mix the Wet Ingredients: In a large bowl, beat together peanut butter, softened butter, granulated sugar, and brown sugar until smooth and creamy. Add the egg and vanilla extract, and mix until fully combined.
  3. Add the Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add to the wet ingredients, stirring until just combined.
  4. Fold in the Marshmallows: Gently fold in the mini marshmallows and chocolate chips (if using), being careful not to overmix.
  5. Form the Cookies: Using a tablespoon or cookie scoop, drop rounded spoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  6. Bake the Cookies: Bake for 8-10 minutes, until the edges are golden brown, but the centers remain soft. Be cautious not to overbake to prevent burning the marshmallows.
  7. Cool and Serve: Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely. Enjoy while the marshmallows remain soft and gooey!

Notes
