Peanut Butter Frozen Yogurt Bites are deliciously creamy and healthy frozen treats featuring a fluffy peanut butter and Greek yogurt filling coated in rich dark chocolate. With a satisfying snap of chocolate and a salty crunch of peanuts, these bite-sized snacks are perfect for a guilt-free indulgence.

Ingredients

Yogurt Mixture

  • 1 cup Greek yogurt
  • 2 tbsp maple syrup
  • 2 tbsp peanut butter
  • ¼ cup roasted salted peanuts

Chocolate Coating

  • 1 ½ cups dark chocolate chips
  • 1 ½ tbsp coconut oil
  • Sea salt, for sprinkling

Instructions

  1. Prepare Yogurt Mixture: In a mixing bowl, combine the Greek yogurt, maple syrup, and peanut butter thoroughly until the mixture is smooth and well blended.
  2. Shape Bites: Spoon 12 dollops of the yogurt mixture onto a parchment-lined baking sheet. Gently spread each dollop to roughly the size of a cookie. Sprinkle the tops with roasted salted peanuts. Place the sheet in the freezer for 1-2 hours until the bites are fully solid.
  3. Melt Chocolate: In a microwave-safe bowl, add the dark chocolate chips and coconut oil. Heat in 30-second intervals, stirring after each, until the chocolate is completely melted and smooth.
  4. Dip Bites: Take the frozen yogurt bites out of the freezer. Dip each bite fully into the melted chocolate, coating it evenly.
  5. Add Toppings: While the chocolate coating is still wet, immediately sprinkle chopped peanuts and a pinch of sea salt on top to enhance texture and flavor.
  6. Final Freeze: Return the chocolate-coated bites onto the parchment-lined baking sheet and freeze for at least 1 hour or until the chocolate has set completely.

Notes

  • Use full-fat Greek yogurt for a creamier texture.
  • Ensure bites are fully frozen before dipping to maintain shape.
  • Adjust maple syrup quantity to taste if a sweeter treat is preferred.
  • Store the frozen bites in an airtight container in the freezer to prevent freezer burn.
  • Optionally, substitute peanuts with almonds or pecans for variety.
