Peanut Butter Frozen Yogurt Bars are a creamy, decadent treat that combine the richness of peanut butter with the tanginess of Greek yogurt. These bars are easy to make, healthier than ice cream bars, and perfect for a refreshing snack or dessert on a hot day.

Ingredients

1 cup peanut butter (creamy or chunky)

2 cups plain or vanilla Greek yogurt

2 tablespoons honey or maple syrup

1/4 cup granola or crushed nuts (optional, for topping)

1/2 teaspoon vanilla extract

Pinch of salt

Instructions

  1. In a medium bowl, mix together the Greek yogurt, peanut butter, honey or maple syrup, vanilla extract, and salt until smooth and well combined.
  2. Line a small baking dish or a loaf pan with parchment paper or plastic wrap for easy removal.
  3. Pour the peanut butter and yogurt mixture into the prepared dish, smoothing it out into an even layer with a spatula.
  4. If desired, sprinkle granola or crushed nuts on top for added crunch and texture.
  5. Place the dish in the freezer and freeze for at least 4 hours or until firm.
  6. Once frozen, remove the bars from the dish and cut them into squares or bars.
  7. Serve immediately, or return any leftovers to the freezer for later.

Notes

For extra flavor, drizzle melted chocolate over the bars before freezing.

To make a vegan version, use dairy-free yogurt and maple syrup.

For a more crunchy texture, use crunchy peanut butter instead of creamy.
