Instructions

  1. Prepare Cornflakes: Place the crushed cornflakes into a large mixing bowl, ensuring they are evenly broken down but still retaining some crunch.
  2. Heat Peanut Butter Mixture: In a saucepan over medium heat, combine the natural peanut butter, honey, and solid coconut oil. Stir continuously and warm the mixture thoroughly for about 3 minutes until everything is melted and well-blended. Remove from heat and stir in the vanilla extract.
  3. Combine Mixtures: Pour the warmed peanut butter mixture over the crushed cornflakes. Stir well until the cornflakes are evenly coated with the mixture.
  4. Form the Base: Transfer the coated cornflake mixture into a greased 8×8 inch baking dish. Press down gently to form an even layer.
  5. Melt Chocolate Topping: In a microwave-safe bowl, combine the chocolate chips, peanut butter, and solid coconut oil. Heat in 30-second increments, stirring between each, until fully melted and smooth.
  6. Apply Chocolate Layer: Pour the melted chocolate mixture evenly over the cornflake base. Spread with a spatula to cover the surface completely.
  7. Set the Bars: Place the dish in the freezer for at least 1 hour or refrigerate for 4 hours until the bars are firm and chocolate topping is set.
