Ingredients

1 cup peanut butter (creamy or chunky)

1/2 cup unsalted butter, softened

1 cup brown sugar, packed

1/2 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 cup chocolate chips (semi-sweet or milk chocolate)

1/2 cup caramel bits or caramel sauce (for drizzling or filling)

1 tablespoon milk (if using caramel sauce)

Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat for easy cookie removal.
  2. In a large bowl, beat together the peanut butter, softened butter, brown sugar, and granulated sugar until creamy and smooth, about 2-3 minutes. Add the egg and vanilla extract, mixing until fully combined.
  3. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the peanut butter mixture, mixing until just combined.
  4. Fold in the chocolate chips to the dough, ensuring they are evenly distributed.
  5. Scoop about 1 tablespoon of dough and roll it into a ball. Place the dough balls onto the prepared baking sheet, spacing them about 2 inches apart.
  6. If using caramel bits, press 3-4 caramel bits into the center of each cookie dough ball. If using caramel sauce, you can bake the cookies without the caramel center and drizzle the sauce over the cookies after baking.
  7. Bake the cookies in the preheated oven for 9-11 minutes, or until the edges are golden and the center is slightly soft. The cookies will firm up as they cool.
  8. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. If using caramel sauce, drizzle it over the warm cookies right after baking for an extra gooey finish.

Notes
