This Parmesan Crusted Chicken Sheet Pan Dinner is a delicious, easy-to-make meal featuring juicy chicken breasts coated in a crispy parmesan and breadcrumb crust, roasted alongside golden red potatoes and tender green beans. Ingredients

Chicken

  • lb chicken breast (about 3-4 pieces, approx. 1 inch thick)
  • 2 Tbsp olive oil
  • 2 garlic cloves, minced
  • ⅓ cup grated parmesan
  • ⅓ cup breadcrumbs (Italian or plain — can add 1 tsp Italian seasoning to plain breadcrumbs)
  • ½ tsp cracked pepper
  • ½ – ¾ tsp sea salt

Potatoes

  • 2 lb red potatoes, cut into bite sized pieces (if small, quartered; larger potatoes cut into 6ths or 8ths)
  • 1 – 2 garlic cloves, minced
  • 2 Tbsp olive oil
  • 2 Tbsp grated parmesan
  • Salt and pepper to taste

Green Beans

  • 1 lb fresh green beans, ends trimmed
  • 1 Tbsp olive oil
  • 1 garlic clove, minced
  • 1 Tbsp parmesan (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C) to ensure a hot roasting environment for crispy potatoes and perfectly cooked chicken.
  2. Prepare Potatoes: Line a sheet pan with parchment paper or lightly spray with cooking oil for easy cleanup. In a medium bowl, toss the red potatoes with minced garlic, olive oil, grated parmesan, salt, and pepper until evenly coated. Spread the potatoes evenly on one-third of the pan and roast in the oven for 10-15 minutes until they start to brown.
  3. Prepare Chicken: Meanwhile, in the same bowl, combine chicken breasts with olive oil, minced garlic, parmesan, breadcrumbs, cracked pepper, and sea salt. Toss well to coat the chicken pieces thoroughly. Remove the sheet pan from the oven, move the partially roasted potatoes to one side if needed, and arrange the chicken on another third of the pan.
  4. Add Green Beans: Toss trimmed green beans in a bowl with olive oil, minced garlic, parmesan (if using), salt, and pepper. Add the green beans to the remaining space on the sheet pan alongside the chicken and potatoes.
  5. Bake Until Done: Return the sheet pan to the oven and bake for about 25 minutes or until the chicken reaches an internal temperature of 165°F (74°C). For extra crispy potatoes, switch the oven to broil on high for 4-5 minutes after baking if desired.
