Ingredients

Dry Ingredients

Instructions

  1. Prepare the mixing tray: Line a tray with parchment paper to place the protein balls on for freezing and setting.
  2. Mix dry and wet ingredients: In a large bowl, combine 1.25 cups almond flour, ¼ cup cocoa powder, ½ cup chocolate protein powder, ¼ teaspoon instant coffee, ¾ cup almond butter, ¼ cup maple syrup, and ¼ cup almond milk. Use a hand mixer or mix vigorously by hand until the mixture reaches a play dough-like consistency, sticky but easy to form into balls.
  3. Add chocolate chunks: Fold in the ¼ cup chocolate chunks evenly throughout the mixture, ensuring every ball will have pockets of melty chocolate.
  4. Form the protein balls: Using a spoon or cookie scoop, portion out the mixture into 16 to 20 balls, each about 1.5 to 2 inches in diameter. Place the formed balls onto the prepared parchment-lined tray.
  5. Freeze to set: Place the tray of protein balls in the freezer for 15 minutes to firm up and hold their shape.
  6. Store appropriately: Once set, transfer the protein balls to an airtight container and keep them refrigerated or frozen until ready to enjoy. The serving size is 2 balls.
