This One-Pot Teriyaki Noodles recipe is a quick and flavorful dish combining tender sautéed vegetables with a savory homemade teriyaki sauce and perfectly cooked spaghetti noodles. Ready in just under 30 minutes, it’s an easy weeknight meal that requires minimal cleanup and delivers a satisfying Asian-inspired flavor with a hint of sweetness and umami from soy sauce and brown sugar.

Ingredients

Vegetables

  • ½ green cabbage, shredded
  • 2 carrots, shredded

Sauce & Seasoning

  • ⅔ cup soy sauce
  • ½ cup brown sugar
  • ½ teaspoon ground mustard
  • 1 teaspoon ground ginger
  • ½ teaspoon garlic powder

Other

  • 1 teaspoon olive oil
  • 16 oz spaghetti (1 pound box)
  • 3 ½ cups water
  • 1 tablespoon sesame seeds

Instructions

  1. Sauté Vegetables: Heat a large pot over medium-high heat. Once hot, add olive oil, shredded cabbage, and carrots. Sauté for about 5 minutes until the vegetables begin to soften and become tender.
  2. Add Sauce Ingredients and Pasta: Stir in soy sauce, brown sugar, ground mustard, ground ginger, and garlic powder until evenly mixed in. Add the spaghetti noodles to the pot, breaking them in half if desired for easier cooking. Pour in 3 ½ cups of water.
  3. Cook the Noodles: Cook uncovered for 15-18 minutes. When the noodles start to become pliable and bendable, begin stirring the pot every few minutes, increasing stirring frequency towards the end to prevent sticking to the bottom.
  4. Finish and Serve: Once the noodles are fully cooked and the sauce has thickened to coat the noodles, remove the pot from heat. Toss in the sesame seeds and mix well. Serve immediately, optionally garnish with additional sesame seeds and chopped green onions.

Notes

  • Breaking the spaghetti in half is optional but can help with easier stirring and even cooking.
  • Stirring frequently towards the end prevents noodles from sticking and burning on the bottom of the pot.
  • Adjust water amount slightly if needed to achieve desired sauce consistency.
  • For extra protein, consider adding cooked chicken, tofu, or shrimp.
  • Garnish with green onions or sesame oil for additional flavor.
