No Bake Pumpkin Pie is a simple and creamy dessert with a spiced pumpkin filling and a buttery graham cracker crust. It’s the perfect fall treat, made without turning on the oven.

Ingredients

1 1/2 cups graham cracker crumbs

1/4 cup granulated sugar

1/2 cup unsalted butter, melted

1 can (15 oz) pumpkin puree

1 package (8 oz) cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon ground ginger

1/4 teaspoon ground nutmeg

1/4 teaspoon salt

1 1/2 cups heavy whipping cream

Instructions

  1. Prepare the Crust: Combine graham cracker crumbs, sugar, and melted butter in a medium bowl. Press the mixture into the bottom and up the sides of a 9-inch pie dish. Refrigerate for at least 30 minutes to set.
  2. Make the Filling: Beat softened cream cheese until smooth. Add powdered sugar, vanilla, cinnamon, ginger, nutmeg, and salt, mixing until smooth. Stir in pumpkin puree until fully incorporated.
  3. Whip the Cream: In a separate bowl, whip heavy cream until stiff peaks form. Gently fold the whipped cream into the pumpkin mixture.
  4. Assemble the Pie: Spoon the pumpkin filling into the prepared graham cracker crust. Smooth into an even layer. Refrigerate for at least 4 hours, or overnight, to set.
  5. Serve: Before serving, top with whipped cream and a sprinkle of cinnamon, if desired.

Notes

For extra crunch, add chopped pecans or walnuts to the graham cracker crust.
